Parmesan baked zucchini 1 pound zucchini 1/4cup shredded Parmesan cheese 1/4 cup Panko bread crumbs 1teaspoon olive oil 1/4 teaspoonKosher salt Pepper to taste Heat oven to 400 degrees Line two baking sheets with foil and spray lightly with vegetable spray Slice zucchini and toss in olive oil coating it well In a bowl combine bread crumbs, parmesan cheese, salt and pepper Place zucchini in Parmesan bread crumb mixture coating both side well. Press to adhere. The mixture will not completely coat each round but provides a light coating for each side. Place rounds in a single layer on baking sheet, sprinkle with remaining Parmesan bread crumb mixture (where needed) Bake for 22-27 mins until golden brown (there is no need to flip while cooking, they will crisp on both sides)Andrea
