Fluffy Pancakes I tweaked my favorite Pancake recipe to be more nutritious & egg and dairy free. Turned out really good! Kids even wanted seconds :) Ingredients 3/4 cup Plant based milk (I used Lt vanilla soy) 2 tablespoons white vinegar 1/2 cup all-purpose flour 1/2 cup whole wheat flour 1/8 cup oat bran 1 tablespoons honey or agave 1 teaspoon baking powder 1/2 teaspoon baking soda 1/2 teaspoon salt 1T flax meal mixed with 3T water 1 T canola oil 1 T apple sauce cooking spray Directions Combine milk with vinegar in a medium bowl and set aside for 5 minutes to "sour". Combine flours, oat bran baking powder, baking soda, and salt in a large mixing bowl. Whisk flax mixture, oil and agave into "soured" milk. Pour the flour mixture into the wet ingredients and whisk until lumps are gone. Heat a large skillet over medium heat, and coat with cooking spray. Pour 1/4 cupfuls of batter onto the skillet, and cook until bubbles appear on the surface. Flip with a spatula, and cook until browned on the other side.Authentically Ashley
