Stuffed Sweet Potatoes 2 sweet potatoes 2 T butter 2 T applesauce 2 T maple syrup 1 t cinnamon ¼ c chopped pecans ¼ c dried cranberries ¼ c diced apple 1/2 teaspoon cinnamon pinch salt & cayenne Olive oil Preheat oven to 400 Use chop sticks on sides to prevent slicing all the way through the potatoes. Rub with olive oil. Mix ingredients, stuff between slices, and on top. Bake at 400 for 40 minutes covered. Bake 15 minutes more uncovered. Cool 5 min before serving.
