Wasabi Salmon with Bok Choy, Green Cabbage, and Shiitakes - I added lemon juice and salt to the wasabi mayo to brighten up the flavors. I wasn't able to find baby bokchoy so I used the large version and used a mix of shitake and button mushrooms to cut down on the cost. I added dried ginger and powdered garlic to both the bokchoy and salmon. Turned out great. Everyone loved it.
