Quinoa Breakfast Bites 1 C cooked quinoa, warmed 1/2 C shredded mozzarella or cheddar 2 egg whites 1 clove garlic, minced 1 t salt 1/3 C chopped fresh spinach leaves Oven 350 degrees spray a mini muffin tin Mix warm quinoa w cheese to melt the cheese. Add egg whites, garlic, salt, and spinach leaves. Stir Spoon mixture into mini muffin tins, filling to the top. Bake at 350 degrees for 20 min.Courtney @ Optimistic Mommy
