Paleo Omelet Muffins! Made these this morning. Got it ready the night before so all I had to do was add the mixture to the muffin pan and bake it when I got up this morning. I used 9 eggs and added cooked sausage, shredded zucchini, yellow squash, red bell pepper and yellow onion, along with avocado and it made 12 muffins. Be careful not to overcook! 2o minutes is perfect!
