meatloaf cupcakes. with mashed potatoes as the "icing". LINK IS BROKEN. We had these tonight for dinner and since the link was broken, here is what I did: Spray a Cupcake pan with non-stick cooking spray and heat oven to 350 (I finally cranked mine to 375 as it was getting late and the little guy's were starving) I made a "new" meatloaf recipe that I got bits and pieces of from different recipe sites. 2 lbs of 95% ground sirloin several cups of very finely chopped veggies including carrots, onions, broccoli, and red, green and orange peppers (at least a 3/4 cup of each when it was all said and done~except the onion and I used a bunch of green onions) two eggs (slightly beaten) a palm size amount of Montreal Steak seasoning a few dashes of Worcestershire Sauce and bread crumbs (for firmness) Mix it all together and roll into baseball size balls and press each ball lightly into the muffin tin. *NOTE* The 2 pounds of ground sirloin and the veggies made 12 "muffins" pop those into the oven for 20-25 minutes, check internal temperature of "muffins" and return to oven as needed. Mashed potatoes: Use your regular recipe~or store bought. Tonight, I tried something a little different, just to see if the kids would notice (they didn't) I used three potatoes and half a head of cauliflower. I boiled the potatoes and the cauliflower together and when it came time to mash the potatoes I just mashed it all together. Boys thought they were the best mashed potatoes they have ever had. When the "muffins" come out of the oven "ice" them with the mashed potatoes. I just served the boys the muffins tonight for dinner, no side of vegetable. The Big Guy was still at work and I did not want to fight them to eat the vegetable. Besides, between the cauliflower in the potatoes and the carrots, peppers, onions and broccoli in the meatloaf, I think I had them covered. The Big Guy ate 2 muffins when he got home! 4 Scheu's up for this recipe as well!! PS super easy! PPS We WILL make these again and freeze them!!! for super easy lunches and dinners. PPPS I will probably make some sort of sauce with them next time. Maybe a gravy "glaze"??!!
