Homemade Horchata (vegan, gluten free, soy free) 7 cups 1 c. raw cashews or blanched almonds 2/3 c. white rice, uncooked 2.5 c. water + 3 c. water 1 3-in cinnamon stick 1 cup sugar .5 tsp vanilla extract In a large blender combine nuts, uncooked rice, 2.5 c. warm tap water, cinnamon stick, cover and place in fridge for 8-12 hrs. Remove cinnamon stick & blend till smooth. add sugar, vanilla extract, 3 c. water and blend (can strain if desired) Serve as is, over ice, or chilled, shake if separatedMaliha
