COCONUT CHICKEN W/ SWEET CHILI DIPPING SAUCE. 2 lb chicken breast; 2 eggs; ¼ c coconut milk; ½ c flour; 1 c ea panko & coconut. ½ t salt; ½ c oil; 1 c sweet chili sauce. Cut chicken diagonally into strips. In 3 bowls, place flour & salt in one; eggs & coconut milk in one, whisk to combine; panko & coconut in one, mix. Put oil in lg skillet til it sizzles/bubbles when you put a little flour in it. Prepare chicken by coating all in bowl 1, then 2, 3. Place strips in 1 layer in oil, about 1” apart.Nicole Harris
