cheesy chicken and rice - 1 can cream of chicken (or mushroom) soup, 1 1/3 C water, 1 C MINUTE rice, 1 packet Italian (or taco) seasoning, chicken breasts, 3/4 C cheese. Cook chicken with a little bit of Italian seasoning and cut into bite-size pieces. While chicken is cooking, mix soup, water, seasoning, half the cheese and rice in 8x8 baking dish. Make sure all the rice is covered. Stir in chicken pieces and top with remaining cheese. Cover with foil and bake at 350º for 30 min.
