"Cooking Classy's" Favorite Fluffy Buttercream Frosting: 3 sticks butter, room temp 4 1/2 cups powdered sugar 3 Tbsp heavy cream 1 1/2 tsp vanilla extract Whip butter on med-high speed until nearly white and very fluffy (7-8 min), freq scrapping down sides of bowl. Add powdered sugar, heavy cream, and vanilla. Mix on low until blended. Increase speed to med. Beat until very light and fluffy, 5-6 minutes, frequently scraping down the sides of the bowl. Immediately spread over cooled cake(s).
