Broccoli and Cheese Twice Baked Potatoes: 2 potatoes, 1 c cooked broccoli, 1 c cooked cauliflower, 1/4 c milk, shredded cheese. Pierce potatoes & cook in microwave on baked potato setting (turn half-way). Cut potatoes in half lengthwise. Scoop out flesh into the large bowl (leave shell). Place shells on baking sheet. Mash potato, calliflower, milk & salt. Add cheese. Spoon mixture into shells. Top with broccoli & cheese. Bake at 400° for 5-10 min.
