BALSAMIC AND ONION POT ROAST. 3-4 lbs boneless chuck roast; 1-2 T steak rub; black pepper to taste; 1-2 T olive oil; 1/4 cup water to deglaze pan; 2-3 large onions, peeled and thickly sliced; 1 cup beef stock, reduced to 1/2 cup; 1/2 cup balsamic vinegar; 1/2 cup tomato sauce Today I made this and it was amazing. I also made garlic rosemary fingerling potatoes in the oven. I didn't do it in a crock pot, I made it in a Dutch oven. Anyway, it turned out really good and the family loved it.
