Almond Joy Cupcakes - Ingredients 1 box chocolate cake mix 1 1/4 cup Lite Coconut Milk 1 cup sweetened shredded coconut 1/2 cup vegetable oil 3 eggs Instructions Preheat oven to 350° Line muffin pan with cupcake liners. In a large mixing bowl combine all ingredients. Mix on low for 30 seconds. Turn mixer speed up to medium and beat for 2 minutes. Fill liners 1/2 full with batter. Bake for 15-20 minutes until centers spring back when pressed. Let cool completely before frosting.
